Giorgio Pignagnoli is the Executive Chef at Nove, Restaurant nestled inside Villa della Pergola, immersed in the famous botanical Garden.
Passionate about cooking from an early age, Giorgio Pignagnoli graduated from Alma, the renowned International School of Cuisine, and then tackled his first work experience at Claudio Sadler's restaurant in Milan.
Other significant ones follow at Principe delle Nevi in Cervinia with chef Federico Zanasi and above all at Lume in Milan with chef Luigi Taglienti from Savona.
Recalled by Sadler, he returns to the side of the Milanese chef as manager of his Chic'n Quick bistro in Milan. Giorgio later decides to move to France, which has always been his great passion, where he works at Yannick Alléno's Pavillon Ledoyen (three Michelin stars).
After the French experience, he returns to Italy to support his two masters again: first at Lume as a chef in the kitchen and then with Sadler at the Baglioni Resort in San Teodoro, where he wins a Michelin star.

In 2022 Nove and Giorgio meet, to look towards the future and aim for an increasingly sustainable, seasonal and sincere cuisine, in close connection with the territory.
The meeting between Villa della Pergola and Giorgio Pignagnoli marks the beginning of a new course, marked by an evolution of the cuisine philosophy of the Nove, a more conscious maturity and a contemporary vision in dialogue with the world.
Here at Nove he will play the role of the spokesperson to all the values that the Villa della Pergola restaurant holds, of that vision of Liguria of which Nove has earned the role of standard-bearer over the years, with the merit of rediscovering the flavors of a territory and with the commitment of their spreading to the fine dining lovers.
