Giorgio Servetto is the Executive Chef of the restaurant Nove at Villa della Pergola.
His approach to cooking is focused and inspired by ingredients, tastes and flavours of Liguria with a particular attention to the simplicity and purity of seasonal ingredients. His neverending research intensifies traditional recipes, turning them into a new and evolving modern dining experience.
Chef Servetto was born in Savona. As his family is from Liguria, he spends his childhood between both the sea and the mountains: Albissola and Palo di Sassello. Growing up on the family farm in Palo he gained insight into the culinary world and soon took a keen interest. Palo, a borderland where the flavours and smells of Piedmont and Liguira combine, has provided him with a deep knowledge of the local ingredients.

Since 2018 Chef Servetto has been visiting tutor for ALMA – International School of Italian Cuisine, founded by the most renowned italian Chef Gualtiero Marchesi. He teaches courses on Traditional Cuisine.
During the winter in 2018 he started his own production of cured meats from his farm in Sassello, exclusively for Nove. Helped by the local village butcher Marco, who has been supplying meats to the restaurant since 2017.
In 2019 he spends a few weeks in the kitchen of his friend Flavio Costa’s Michelin awarded Restaurant, 21.9, in Piobesi D’Alba, where he experienced a "confrontation" with a territory of excellence as the Langhe.
Servetto has been appointed "Ambasciatore del Gusto" (Ambassador of Taste), the only member in Liguria, alongside his many other accolades.
At Nove Ristorante the Chef and his team make use of the herbs, citrus fruits and edible flowers found in Villa della Pergola Botanical Garden. This creates a unique and genuine tasting experience.
